Ethnic

means

relating to a particular race of people.

or

from a different race, or interesting, because a characteristic of an ethnic group that is very different from those that are common in western culture:
eg.  ethnic food
ethnic costume

or

(of a human being) displaying characteristics, as in physical appearance,language, or accent, that can cause one to be identified by others as a member of a minority ethnic group

We do not differentiate between our workers on the basis of their background or ethnic origin.
